Meal Panning Monday


 
This past weekend I decided to make an 19 lb. turkey! 

No real occasion except that we were celebrating a rare weekend with David at home with us.  Love those kind of weekends.  So you will note a menu full of dinners to use up all that leftover turkey.
  • Monday: Turkey Pad Thai (using gluten free pumpkin ginger rice noodles)
  • Tuesday: Steak with crispy roasted cauliflower
  • Wednesday: Turkey soup full of corn, garlic, onions, and greens (perfect for a rainy weeknight)
  • Thursday:  Turkey enchiladas
  • Friday: Dinner with my parents
Even with all these dishes, I have so much turkey leftover.  But I love that.  I just diced up the leftover meat and put it in the freezer. 

And to be even more efficient with that huge turkey, today I will make homemade turkey stock.  It is so healthy for you, could be not easier and is so much better than anything you can buy in the store.  Hmm, maybe I will post a recipe about it later this week.
